Korean Grilled Ribs

Kalbi Kui or Galbi Gui is one of our family’s favorite dishes to cook from Korea’s lineup of mouthwatering barbecues. “Kalbi or Galbi” literally means ribs and “Kui or Gui” refers to a type of cooking which is grilling.  Of course, the ribs can be beef, pork, or chicken.  But the one I always use for this particular dish is beef short ribs. Today, I am adapting a recipe from one of my favorite books – The Barbecue Bible by the grill master – Steven Raichlen. This book is packed with different types of grilled dishes from all over the world, so check it out!

Korean Grilled Short Ribs – Kalbi Kui

INGREDIENTS:

  1. 3 lbs beef short ribs - sliced to 1/4 inch thick.
  2. 1 Asian pear (regular pear can be used if Asian pear is not available).
  3. 5 cloves garlic
  4. 4 scallions - use green and white parts, trim the ends
  5. 1/3 cup soy sauce
  6. 3 Tablespoon pure sesame oil
  7. 4 Tablespoon honey
  8. 3 Tablespoon sake
  9. 1 1/2 Tablespoon sugar
  10. 1 teaspoon ground black pepper

DIRECTIONS:

    Marinading the Ribs
  1. Coarsely chop the pears, scallions, and garlic then place in a food processor or blender.
  2. Add the soy sauce, sake, sugar, black pepper, honey, and sesame oil.
  3. Blend until everything is smooth
  4. Pour the marinade in a large bowl.
  5. Add ribs and mix until fully coated.
  6. Transfer and arrange ribs in a Ziploc bag and pour the remaining marinade in the bag.
  7. Refrigerate overnight.

  8. Grilling the Ribs (the fun part)
  9. Preheat bbq grill to high (about 450 degrees).
  10. Brush bbq grate with oil.
  11. Arrange ribs and grill.
  12. Grill the ribs for about 3 minutes each side (longer if you like it well done).
  13. Serve immediately with rice.
  14. By the way, I like mine cooked medium. How would you like yours?

  2. Ray, when I lived in London they used to laugh at me for asking for “scallions” because there it seems they are called “spring onions”. My other half could happily live on ribs so I’ll have to make these for him. Love the easy marinade.

    Great looking ribs! I love grilling, and ribs are one of my favorites. Although I usually do pork ribs, beef ribs are excellent too. And this looks to be a great way to prepare them – tons of flavor. Really good stuff – thanks.

  5. I just drooled and couldn’t help it. Looks so good! Bookmarked already and ask my husband to grill for the superbowl party. The key is to be around the bbq grill when he’s grilling so that I get my share…with lots of guys and bears, this will disappear too fast!

    I’ll take mine any way you like to cook them! Short ribs are one of my favorite meat cuts. Bobby smokes some mean short ribs, but it takes hours. This recipe looks like it would get them to the table much faster and be just as tasty, but completely different! I’ve never seen pear used in a marinade. I’m assuming it helps to join the ingredients together to better stick to the meat as well as adding flavor and some sweetness. Love this marinade! Have a great week Ray!

    Ray, these ribs look great…and Asian pear in the marinade sounds really unique.
    I got this book for my husband…a couple of years ago, but just look at the grilling chart :)

    These look so fabulous and remind me of the unforgettable night I had in a Tokyo barbecue restaurant… (I didn’t have ribs then but it was a Korean style barbecue). Actually I think I have never had beef ribs; only pork ribs. I don’t have barbecue alas, but I’m sure your ribs would be fantastic on my grill pan too.

  18. Hi, Ray! Galbi / Kalbi is also one of my favourite dishes to make! I only grill mine (not the same if it ain’t grilled, LOL). But the winter here in Toronto is harsh, reaching -20C to -30C at times. Hardly what you call a grilling weather. I’m just looking forward to Spring and Summer so I can fire up the barbie’!!!
