Kalbi Kui or Galbi Gui is one of our family’s favorite dishes to cook from Korea’s lineup of mouthwatering barbecues. “Kalbi or Galbi” literally means ribs and “Kui or Gui” refers to a type of cooking which is grilling. Of course, the ribs can be beef, pork, or chicken. But the one I always use for this particular dish is beef short ribs. Today, I am adapting a recipe from one of my favorite books – The Barbecue Bible by the grill master – Steven Raichlen. This book is packed with different types of grilled dishes from all over the world, so check it out!
Ray, when I lived in London they used to laugh at me for asking for “scallions” because there it seems they are called “spring onions”. The key is to be around the bbq grill when he’s grilling so that I get my share…with lots of guys and bears, this will disappear too fast! I’ll take mine any way you like to cook them! Short ribs are one of my favorite meat cuts. Bobby smokes some mean short ribs, but it takes hours. This recipe looks like it would get them to the table much faster and be just as tasty, but completely different! I’ve never seen pear used in a marinade. I’m assuming it helps to join the ingredients together to better stick to the meat as well as adding flavor and some sweetness. Love this marinade! Hardly what you call a grilling weather. I’m just looking forward to Spring and Summer so I can fire up the barbie’!!!
