Simple Potato Salad

Like most summer barbecue parties, potato salad is a side dish that is always present at ours. This fresh and simple potato salad is perfect paired with anything grilled like chicken, beef, and pork. I added pineapple tidbits to give it a little kick on the sweet side of the palate, but if you are not a pineapple fan, you can just omit it. I also used a variety of potatoes like yellow, red, and purple just to add colors, but regular spuds would be just as delicious.

Simple Potato Salad

INGREDIENTS:

  1. 4 potatoes
  2. 4 hard-boiled eggs - coarsely mashed
  3. 4 Persian cucumbers - sliced thinly
  4. 2 medium carrots - finely chopped or shredded
  5. 2 tablespoon rice vinegar
  6. 1 tablespoon olive oil
  7. 3 tablespoon pickle relish
  8. 1 1/2 teaspoon salt or to taste
  9. 1 1/2 teaspoon ground black pepper or to taste
  10. 3/4 cup mayonnaise
  11. 1/2 cup pineapple tidbits (optional)

DIRECTIONS:

  1. Wash and boil potatoes until medium-soft that you can break with spoon.
  2. Transfer potatoes in a colander to drain.
  3. Transfer potatoes back in a mixing bowl.
  4. Break potatoes into chunks with a spoon.
  5. Add vinegar, olive oil, salt, and ground pepper.
  6. Mix until all are completely combined and then set aside to cool to room temperature.
  7. Add the rest of the ingredients then mix thoroughly.
  8. Chill before serving.
  9. ENJOY!

    Oh I am a fan of potato salad as well as pineapple but never would have thought to combine them. Also love the addition of the cucumber! What a great salad and so colorful! Can wait to start seeing the purple potatoes here!

    Ray, a potato salad is never simple and yours doesn’t look like one for sure. It’s such a wonderful idea to combine several different potato colours. I must think about it next time I prepare such a salad.
    I am strangely reluctant to add pineapple to some savoury dishes, but I love it made into a hot sauce with chili (I preserve lots of jars every year). On the other hand, I have never had a chance to taste pineapple with potatoes and your bowl of salad looks so tempting… Thanks for the wonderful idea.
