Seafood Fried Rice

I love cooking fried rice. To me fried rice is one of the most practical and frugal dish ever invented. Why? Imagine you get to re-use most of the left over rice and other meat to end up in a family dining table as another dish. You can also be as creative as you can by adding all your favorite ingredients to make it delicious. Well, not all. I mean I wouldn’t add marshmallow in it unless you are cooking fried- Rice Krispies® treats. Hey, why not? Okay, never mind.

This seafood fried rice was a lot easier to make than I thought. Just prep the shrimp, mussels, and then marinate. That’s it! Now to complete the seafood atmosphere, I used shrimp oil to stir fry everything. The rest is just child’s play. Since I really love making this fried rice, maybe I should call it “Little Filipino-Asian-Guy Paella!” What do you guys think? Yes, no? Cricket, cricket. Oookay, maybe not! :=p

Seafood Fried Rice

Serves About 6

INGREDIENTS:

  1. 8 cups cooked rice - grains separated
  2. 14 pcs half-shelled mussels - cleaned
  3. 14 pcs shrimp - shelled and deveined
  4. 1 pack cooked fish balls - cut in quarters
  5. 2 tablespoon oyster sauce
  6. 2 tablespoon soy sauce
  7. 2 tablespoon sesame oil
  8. 1 1/2 cup frozen peas and carrots - thawed in room temperature and then drained.
  9. 1 small onion - sliced in thin wedges
  10. 5 cloves garlic - finely chopped
  11. 6 green onion stalks - chopped with white parts separated.
  12. 2 tablespoon shrimp butter or oil - see video above on how to make it.
  13. 2 tablespoon vegetable oil
  14. Salt to taste

  15. Seafood Marinade:
  16. 2 tablespoon soy sauce
  17. 1 tablespoon sesame oil
  18. 1 tablespoon dry sherry

DIRECTIONS:

    Marinating the Seafood
  1. Place cleaned seafood in a bowl.
  2. Add marinade ingredients.
  3. Mix until fully coated.
  4. Set aside in the fridge and let marinade for 2 hours.

  5. Cooking the Seafood
  6. Place wok over high heat.
  7. Wok must be heat up well for stir frying.
  8. Add 2 tablespoon vegetable oil.
  9. Carefully swirl oil around the wok to coat.
  10. When the oil is hot, add mussels.
  11. Stir fry for about 3 minutes or until fully cooked.
  12. Add fish balls and then stir fry for 3 minutes or until fully cooked.
  13. Add shrimp and then stir fry until light pink.
  14. Transfer cooked seafood in a bowl, cover, and then set aside.

  15. Cooking the Fried Rice
  16. Return wok over high heat.
  17. Add 2 tablespoon shrimp oil.
  18. When the oil is hot, add garlic.
  19. Stir fry garlic for 1 minute.
  20. Add white parts of green onions, peas, and carrots and then stir fry for 2 minutes.
  21. Add rice, soy sauce, oyster sauce, and sesame oil.
  22. Stir fry until until all ingredients are fully combined (about 3 minutes).
  23. Add sliced and green onions and then stir fry for 1 minute.
  24. Add seafood back and mix for about 3 minutes.
  25. Add salt to your preference.

Cooking Notes

I usually prepare rice by separating the grains as much as I can with a wooden spatula.

    I think “Little Filipino-Asian-Guy Paella” is the perfect name for this dish! Seafood, rice and veggies – sounds right to me! What a simple and tasty marinade for the seafood! Love the look and “smell” of this dish. Yes – as always, one can smell a dish through your pictures! A few weeks ago I had a mussel dish and it was excellent causing me to rethink my dislike of mussels. I’ve decided to find some and give a mussel dish a try, starting really simple, like your mussel ginger soup. Thanks for the video on how to clean them! That helps a lot!

  8. The closest thing I’ve made with seafood and rice is Paella. I’ve never tried making fried rice with all kinds of seafood. Only shrimp, yes.   13. No Ray, I’d never add marshmallow into my fried rice. Ha! You are always full of humor. I’ve been making fried rice since we bought a trustable rice cooker, but not with those fresh seafoods which I miss most. Oh man, I really miss cooking with fresh seafood. Until we move closer to the city, I can only stare at your seafood fried rice and wish you can send some to me.

    I agree with you, its a great way to reuse the left over rice. There is nearly everyday left over rice, in my house at least. I am always interested to learn a new fried rice recipe. Actually I got introduced to this dish in India only, so I am convinced the east asian version tastes for sure differently. They sometimes add indian influenced masala mixes here to the fried rice. thanks for the marination recipe idea with sherry, never tried but surely will now!

I am always thrilled to discover other blogger’s fried rice recipes because not only each cook fries rice in a different way, but also every fried rice bowl is different (at least in my kitchen!).
