Thai Iced Tea Ice Cream

Sorry about no postings for the last week or so. We were in New York as a tag along on my daughter’s business-related trip and yay we were FOB’s! Okay, that stands for “Filipinos on Bacation.” You see, when I go out of town, I focus on the purpose of the trip, and I don’t do anything unrelated. I guess that’s just how I keep the sanity on a more normal mode. In my opinion, New York City is a place where you either love it or hate it and to me, it is the former. I’ve been to the Big Apple many times before but never during summer time, and my goodness was it was hot and humid!

Because of the nasty weather, cold drinks and anything cold is what we always had during our stay and it sure helped a lot. Speaking of cold, I want to share one of my favorite Thai treats but in a form of an Ice cream and for those who love Thai Iced Tea, ahhh you should try this. I also want to share this cliff from one of my favorite sitcom – “Friends.” It reminds of this funny scene every time I’m in a flight.

Thai Iced Tea Ice Cream

INGREDIENTS:

  1. 3 cups half and half
  2. 1/2 cup Thai Iced Tea mix
  3. 6 egg yolks
  4. 3/4 cup sugar
  5. pinched of salt
  6. Sweetened condensed milk topping (optional)

DIRECTIONS:

  1. Add half and half in a large saucepan.
  2. Place saucepan over medium heat until half and half starts simmering.
  3. Stir in Thai tea mix then turn off heat.
  4. Transfer dairy mixture into another bowl under a fine mesh strainer and let it steep for 10 minutes.

  5. In a bowl, whisk egg yolks and sugar until smooth and thicken.
  6. Slowly ladle one cup dairy mixture into yolks while constantly whisking until fully combined.
  7. Transfer yolks mix and remaining dairy mix to a large clean sauce pan then whisk until all mixture are fully combined.
  8. Turn heat on to medium-low and whisk frequently until it forms a thin-syrup like custard form (Do not cook custard as it will thicken).
  9. Pour mixture to a fine mesh strainer.
  10. Refrigerate to chill overnight.
  11. Churn mixture in an ice cream maker until smooth. **
  12. Freeze ice cream for minimum of three hours before serving.
  13. Drizzle with optional condensed milk as topping.

    Nice to know you were having fun in NYC :) Looks like we all are going crazy with ice cream these days! Never made anything with tea other than tea, the drink! This sounds like a interesting flavor!

    I know I would love this ice cream since I always seem to order Thai iced tea at a Thai restaurant. My meal feels incomplete if I don’t have it.
    This would be the perfect dessert for me. Looks so yummy!
    Is there a particular brand of Thai tea you buy or recommend?

    I do remember that scene from Friends – hilarious! Great sitcom! Yes, I do LOVE Thai Iced Tea and have ordered it many, many times. So it’s really not fair of you to tempt us with this recipe! :) You just had to get one more ice cream recipe in before the end of July and it had to be something I know I won’t be able to resist! Bobby was telling me last night that it was past time for another batch of ice cream, so guess what I’ll be making! YUM! Sounds like you had a great trip to New York in spite of the weather!

    These are breathtaking photos, Ray. I cannot stop looking at both the ice-cream and the tea. I wish I lived closer and could attend to your photography classes… (I hope you do give classes!).
    I have never had Thai tea and even have no idea how it tastes, but your ice-creams sound mysterious and delicious.

    Gawd, this would be so dangerous in my freezer. As big of a fan of Thai iced tea as I am, I would eat a gallon of this ice cream in no time flat.

    I used to work in NYC, and the head and humidity in July can be awful. All of the buildings soak up heat, making it really uncomfortable to walk outside. Anyway, this would cool one down for sure! Nice flavors, and it’s so pretty! Thanks.

  11. I almost always order Thai ice tea when I go to Thai restaurant. I *think* I even Thai ice tea mix at home that I bought last year and somehow didn’t taste the same from one at restaurant so I left the package…. If it’s not expired, I must make this. I’m afraid I’d be eating this and cannot go sleep every night (from caffeine) haha! Once I get addicted I go crazy. And I have a feeling that I will love this so much. :-D
