To me, Lime and cilantro are the perfect combination as a base for chicken marinade; it adds a distinct accent of flavor to the meat. In this particular recipe, I glazed the wings with sweet chili sauce as a finishing touch.
Just to add a little complication to counter the sweetness and sourness, I used fish sauce instead of plain salt. And lastly, for a little heat, I added some Sambal Chili paste. Well, It’s summer, and you know what that means. It’s grilling season! So, let’s grill and let’s eat. CHEERS!

Cilantro & Lime Chicken Wings
INGREDIENTS:
- 4 lbs cut chicken wings (not whole)
- Sweet Chili Sauce
Marinade
- 1/2 cup fresh lime juice
- 1 1/2 Tablespoon fish sauce
- 1 teaspoon gound black pepper
- 1 1/2 teaspoon Sambal Oelek (or more for more heat)
- 1 cup chopped cilantro
- 1 1/2 Tablespoon finely chopped fresh garlic

DIRECTIONS:
Marinating the Chicken
- Combine all of the marinade ingredients in a large mixing bowl.
- Add the chicken wings then mix until fully coated.
- Transfer wings in a Ziploc bag including marinade.
- Refrigerate for 8 hours.

Grilling the Chicken Wings
- Pour about 1 cup of sweet chili sauce in a bowl then set aside (for glazing).
- Pre heat BBQ grill to 400 degrees.
- Carefully place chicken wings on the grill.
- Grill for about 4 minutes on each side or until FULLY cooked.
- Generously brush sweet chili sauce and let it cook for another 2 minute on each side.
- Transfer cooked wings on a serving plate.
- Brush more sweet chili sauce on each wings.
- Serve immediately.
- ENJOY!

Can’t have enough of chicken wings. It is just the best part. They should breed chickens with lots of wings. Lovely seasonings on your wings, Ray. Love the images, too.

Cilantro and lime do belong together. This marinade sounds great for chicken, especially chicken headed to the grill!

A luncheon of Chinese-style chicken wings just past! Enjoyed it hugely as I am certain I shall do this
! This much, much easier: love the lime, fish sauce, sambal oelek combo – since my others, in their marinade, were in a 190 C degree oven for some 40 minutes, would just like to see what 4 minutes either side will do to such ‘multi-faceted’ pieces of poultry!

Thank you for commenting and I hope you like the outcome. Depending on the size of wings that you are cooking, so remember, 4 minutes on each side is not a rule but a recommendation. “Until Fully Cooked” are the rules that should be followed. Have a great weekend!

Haha! I agree, Reem. Chicken should have more wings but given a choice. What would you give up to get say an extra wing? I would choose to give up the tail part. Yikkes!!

It’s obvious that I can’t stop drooling over these photos since I saw them. Sweet chili sauce is one of my favorite condiments and this recipe sounds like my kind of wings… sure I like soy sauce base, but I have special feeling for the sweet chili sauce… love this marinade . I can imagine biting into these wings. Impossible to stop for my mouth to water!

Hi Ray! I totally agree that cilantro and lime make the perfect chicken marinade. I sometimes add tequila to give a bit of a twist. I can’t wait to your this spicy version. I adore sweet chili sauce.

Lime and coriander are one of my favourite seasonings (not to mention the lime’s important place in drinks
) and it’s funny because I have been craving chicken wings for several weeks now, so it seems like you have posted a dish I would go crazy for. I would just need to adapt it to my oven (no grill alas…). I can already imagine the aroma that these wings will spread around my whole kitchen….

Bobby always teases me because I always eat the wings off of a whole chicken before tackling any of the other parts.
Just give me the wings and to heck with the rest of the chicken. This marinade has my mouth watering and my nose burning. Oh I love the sweet and spicy!!! Great looking batch of chicken wings!!!!
