Mussel Ginger Soup (Sinabawang Tahong)

It’s that time of the month again where Kulinarya Club and its lovely January hosts—Pearl of Sassy Chef and Thea of Words and Nosh—picked a very interesting but challenging theme.  The theme is to come up with a healthful dish that you would like to have for your birthday!  My cough-cough-choke-tieth birthday is not until November. . . hmm.  Okay, let’s cook a mussel dish.  Mussels are one of my favorite seafood and I usually bake or grill them with a lot of a butter-garlic concoction, or what is called compound butter.  Well, since big letter H is on the requirement, I am going for the soup dish instead and without the butter.  So, this should be another easy to prepare dish and perfect for this cold and often chilly weather.  Okay, let’s cook and dig in.

 

 

 

Mussel Ginger Soup

Serves 5 to 6 Adults

INGREDIENTS:

  1. 4 1/2 lb fresh medium sized mussels - cleaned (please see the video below)
  2. 1 medium tomato - finely chopped
  3. 1 small onion - finely chopped
  4. 2 Tablespoon finely chopped garlic
  5. 3 Tablespoon finely chopped ginger
  6. 3/4 cup coarsely chopped cilantro + 1/4 cup for garnishing
  7. 1 cup corn kernels
  8. 7 cups water
  9. 3 chilli peppers (optional)
  10. 3 Tablespoon olive oil
  11. 3 Tablespoon fish sauce or to taste.
  12. 1 Tablespoon ground black pepper or to taste

DIRECTIONS:

  1. Place large pot over high heat.
  2. Add the olive oil.
  3. When the oil is hot, add onion, garlic, ginger.
  4. Saute for about 3 minutes
  5. Add tomato and saute for another 2 minutes.
  6. Add 3/4 cup cilantro and optional chilli pepper and saute for another 1 minute.
  7. Add mussels, fish sauce, black pepper, and water.
  8. Turn heat down to medium
  9. Cover and let it simmer until all of the mussels opened and fully cooked.
  10. Add more fish sauce or salt if desired.
  11. Serve hot with rice or bread.
  12. ENJOY!

    i love mussel soup but never had it with corn before. i still have the other half of the supot of mussel (leftover from my mussel post) and will try this tonight. will show you pic if i can haha.
    really sounds so healthy but it doesn’t look like an eeky health food at all.

    What a beautiful bowl of mussels! Makes me actually want to eat mussels. :) I’m not a big fan, love clams, but mussels – not so much. Every great once in a while I can find mussels and clams here and I’ve always wanted to do something with them. This would be the perfect recipe to try out, except I think I would use both mussels and clams. I’d eat the clams and the husband can eat the mussels. :) Gorgeous pics as always!

  18. What a stunning presentation of mussels. I grew up eating clams but we didn’t really have mussels around so it’s rather new seafood I started to eat after becoming adult. Compared to all the mussels dishes I had, this is nothing similar. Tomatoes, corns, herbs…just beautiful flavors! Definitely would love to try this recipe.

    I love mussels. When I was a little girl, my parents taught me to order them with that lovely garlic butter you mentioned. I am sure this healthy soup would be lovely, too, though for a birthday, I say bring on the butter!
