Lime-in-the-Coconut Drumsticks

I was going through the January/February release of “Everyday by Rachel Ray” and this recipe called “Lime-in-the-Coconut Drumsticks” caught my attention because not only it looks  delicious, but also there was something about the marinade instruction that I thought was kind of funny.   Okay, here’s what it said about pureeing the marinade verbatim “In blender, combine all ingredients except chicken.”  Ah hello! Seriously! Really? Somebody in the OUR world will actually add the chicken drumsticks in the blender with the marinade?

All right, other than that,  this should be an easy prep dinner. The only thing is the marinating time calls for an hour; I think it’s best to change it to overnight. So I am adapting this recipe with minor changes. I also used the barbecue grill but if you prefer using the oven, I have the author’s instruction below. Remember, do not add the chicken in the blender! :=)

Lime-in-the-Coconut Drumsticks

Serves 5 adults

Recipe was adapted from Everyday by Rachel Ray

INGREDIENTS:

  1. 10 chicken drumsticks with the skin on

  2. Marinade Ingredients
  3. 3 cloves garlic - crushed
  4. 3 Tablespoon chopped ginger
  5. 1 cup chopped scallion - green and white parts included
  6. 1 cup chopped cilantro
  7. 1/4 teaspoon cayenne pepper
  8. 3/4 cup honey
  9. 1 1/2 cup coconut milk
  10. 1 Tablespoon fish sauce
  11. 1/2 cup fresh lime juice
  12. 1 teaspoon grated lime zest

DIRECTIONS:

  1. Place all the marinade ingredients in a blender or food processor to puree.
  2. Make two deep slits on one side of the drumsticks.
  3. Combine marinade and drumsticks in a large Ziploc bag.
  4. Place the bag flat in the refrigerator for two hours (overnight is better).
  5. Turn the bag every hour if possible.
  6. Line a baking sheet with aluminum foil.
  7. Transfer chicken in the baking sheet.
  8. Discard the marinade.
  9. Bake at 450 degrees for 20 minutes.
  10. Turn each drumsticks and bake until cooked through for about 10 minutes.

Notes

Serve with rice and hot sweet chili sauce on the side.

    The title alone won me over! I am very big on all things tropical, so this recipe does get a thumbs up from me. Your picture is so tempting, hard to say no to those drumsticks-yum. Also, the extra bonus is that it is fairly easy to put together. Great post!

  6. LOL! You crack me up from the morning! It’s so funny when the instruction was “written”… Even the recipe is for a beginner cook, I highly doubt anyone would put chicken in blender….anyway it was a good laugh.

    Ray – I have to say that I know someone who needs “except the chicken”. :) A friend that edits some of my recipes has actually written that in!!!! She keeps reminding me to write for the lowest common denominator. Oh my! What a tasty recipe! Love the use of lime instead of lemon. Your pictures are just as tasty as your recipe!

    Oh, Ray, you really brought big smiles on my face early in the morning. Actually I laughed so hard I almost fell off the chair…haha. Yes, ‘Remember, don’t add the chicken into the blender!’….haha. We do, or at least I do, make some very silly mistakes in the kitchen sometimes. Just yesterday, I added water into my sliced big onions instead of oil for frying!…..hmmm. Love the marinade. I think the coconut and lime is a beautiful combination.   19. Did you share these with your neighbor when you grilled these babies outdoor? Because I’d come knocking at your door if I was your neighbor:) These drumsticks look and sound yummy. When there is a mix of lime and coconut milk, no Southeast Asian will say ‘no’ to this. Great one Ray!

    Ray, it sounds very flavoursome and I bet the aroma is enticing! I love all the marinade ingredients, so I have to remember your recipe. I think I have never used coconut milk in marinades (only in soups and Thaï curries).
