Watermelon Mojito

One of the good things about summer is the abundance of sweet watermelons and its prices that are unbelievably low. So whenever I have lots of watermelon on hand, I always think of watermelon cocktails.  It is refreshing and it’s great for backyard entertaining.  This recipe of Mojito was inspired by Bobby Flay’s watermelon-tequila cocktail published in Food & Wine.   I was going to use his recipe but I ran out of Tequila, so I decided to make a Mojito instead.

 

Watermelon Mojito

INGREDIENTS:

  1. 1/4 cup Sugar
  2. 1/4 cup Water

  3. 8 cups diced seedless Watermelon
  4. 1/4 cup fresh Lime Juice
  5. 1 1/2 cup Blueberries
  6. 1/2 cup lightly packed fresh Mint Leaves plus few more leaves for garnishing
  7. 1 cup Bacardi Rum
  8. Ice

DIRECTIONS:

  1. Combine water and sugar in a small sauce pan
  2. Place sauce pan over medium heat and let the mixture simmer until sugar dissolves.
  3. Set aside to cool.

  4. In a blender or food processor, puree the watermelon.
  5. Place fine strainer over a bowl
  6. Transfer purred watermelon over the strainer and press gently with a spoon to extract all the juice.
  7. Discard the pulp.
  8. In a large pitcher, combine lime juice, sugar syrup, mint, and blueberries.
  9. Lightly muddle blueberries and mint with a wooden spoon.
  10. Add watermelon and rum then stir.
  11. Transfer in ice filled glasses.
  12. Garnish with slice of lime and mint.
  13. ENJOY but please drink responsibly! Don't drink and drive!

    Ray, it looks so tempting! I know what I’ll be drinking tomorrow night. I have a quarter big watermelon waiting to be eaten or… drunk, so I feel as if you knew what I had in my fridge ;-) A wonderful, appealing photo!

  10. I’m going with the kid-friendly version for myself and the kids. =) I first thought from the photo that it’s a boba (bubble tea). Hm, maybe adding big tapioca pearl for my kid-friendly version may not be a bad idea after all. This photo looks so refreshing and soothing! Really like a summer magazine cover!

    Just stumbled upon your blog – so glad I did. Before watermelons disappear from the produce stands think I’d better get one and try this. I live in Texas and I think we still have melons that are fresh and locally grown.
