Filipino Style Macaroni Soup

Whether it’s Thanksgiving, Christmas, or New Year, we will always have this main dish leftover that we don’t know what to do with. It can be Chicken, Turkey, or Ham. If you have this dilemma every year, why not make a Filipino style macaroni soup out of it. In this recipe we will use Ham but of course you can use chicken or turkey.

Leftover Ham Bones, Turkey, or Chicken.
2 cups Macaroni Shells
4 stalks Celery – chopped
3 medium Carrots – peeled and chopped
1 small Onion – diced
5 cloves Garlic – minced
2 Tablespoon chopped Green Onions
2 Tablespoon Butter
1 Tablespoon Olive Oil
8 cups Water
2 cups whole milk
ground Black Pepper to taste
Salt to taste
Hard boiled eggs (optional)

Using a small knife, trim all the meat out of the ham.
Set all the trimmed meat aside.
Place large casserole over medium-high heat.
Melt butter.
add Olive Oil.
Add onion, and garlic then stir fry until onion is translucent.
Add the bone.
Add Water.
Cover and let it boil for 5 minutes.
Turn heat down to low and let it simmer for 20 minutes.
Turn heat up to medium and add Macaroni shells, and the trimed meat.
Let it boil for about 5 minutes
Add carrots, celery, and Milk
Stir slowly
Let it boil until Macaroni shells are cooked.
Add Salt and Pepper to taste.
Transfer in serving bowls.
Garnish with Green Onions
Add slices of boiled eggs (Optional)
